Tahiri is also known as "Mitho bhat". Mitho bhat gets its name from "Mitho" meaning sweet and "Bhat" meaning rice. Tahiri is made in all Sindhi households on "Cheti Chand" (the Sindhi New Year). It is an offering as prasad to Jhulelaal.

Tahiri

 2 cups Basmati Rice
 1 cup Sugar
 1 tsp Saffron
 1 tbsp Orange food colour
 1 tsp Cardamom powder
 2 tbsp Pure Ghee
 1 tbsp Black Raisins
 1 tbsp Pistachios
 3 cups Water

Heat pressure cooker. Add water, bring it to boil.

Add Saffron strands.

Add Basmati Rice (soaked in water for 30 minutes) to the boiling water.

Add Cardamom powder.

Close the pressure cooker with lid, cook for 2 whistles.

When the cooker cools down, open the lid.

Add sugar and Orange food colour,
dissolved in 1 tbsp water.

Give it a gentle mix.

Put the lid again and cook for 2 more whistles.

Heat Ghee in small pan, add black raisins (cut into halves) and pistachios (slivered.

Pour the tempering over the Tahiri (Mitho bhat).

Transfer it to a serving bowl.
