Chicken Fried Rice, basically fried rice is a staple in most Japanese and Asian restaurants. This homemade rice is even better than restaurants. Fried Rice can be made with Chicken, Prawns, Pork however for vegetarians this can also be made with Mushrooms, Soya Beans, Tofu, Paneer (Cottage Cheese)

Chicken Fried Rice
1 tbsp Sesame oil
2 tsp Chopped Garlic
2 tsp Chopped Ginger
1 qt Chopped Onion
50 g Chopped Capsicum
50 g Chopped Beans
50 g Chopped Carrot
50 g Chopped Mushroom
50 g Chopped Capsicum
50 g Chopped Cabbage
20 g Chopped Spring Onion
Salt to taste
Freshly Pounded Black Pepper Granules
3 qts Eggs
For Chicken
250 g Chicken
2 ½ cups Water
½ tsp Freshly Pounded Black Pepper Granules
5 qts Garlic
Salt to taste
For Rice
1 cup Basmati / Long Grain Rice Rice
2 cups Chicken Stock
1 cup Water
Preparing chicken
4Add 4 to 6 cloves of Garlic
5Cook the chicken till it is completely cooked
6Remove chicken and keep it on a bowl to cool down
* Keep the chicken stock for making Rice.
7Once chicken is cool, shred the chicken and make small pieces and throw away the bones.
Preparing Rice
9Use the chicken stock (which was kept aside while making chicken)
10Add rice. If required Put some more water for cooking
11Cook the rice until it is cooked properly and keep it aside
Making Of Chicken Fried Rice
12Take big saucepan and Sesame oil
13Add chopped Ginger and Garlic
16Add all the vegetables except spring onion (i.e Chopped Capsicum , Beans, Carrot, Mushroom, Capsicum and Cabbage )
18Add Freshly Pounded Black Pepper
19Make a space in between ( i.e. move veggies aside and make space in the center)
20Break all three eggs in the center
21Stir it very slowly so you get small chunks of eggs
22Add shredded Chicken pieces and mix well
23Add Spring Onion (keep some for garnishing the Chicken Fried Rice at the end.)
24You may add some sauce like soy sauce or vinegar if you like
25Now add cooked rice and mix it well for a 30 to 40 secs
26Your Chicken Fried Rice is ready. Serve Hot and add spring onion for garnishing.
