Pethe Ji Bhaji (Pumpkin Vegetable Subji)

- 1 kg Pumpkin
- 4 medium sized tomatoes
- 2 tbsp finely chopped coriander
- 5 finely chopped green chillies
- 1 tsp mustard seeds,31/2 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/2 tsp turmeric powder
- 5-6 tbsp oil and salt to taste.
Wash, deseed and finely chop the pumpkin. Finely chop the tomatoes. heat the oil anD put in the mustard seeds. When they start popping then ass pumpkin, green chillies and salt. After about 20 minutes, put all the powderd masalas and tomatoes. Cook well till oil separates and the pumpkin becomes tender. garnish with chopped coriender leaves. serve hot with khichdi.
